• Acidity:
  Refers to a pleasant "snap" or crispness that makes coffee refreshing and palate-cleansing. It does not mean "bitter" or "sour." High acidity is a desirable characteristic of mountain-grown Arabica coffees and has nothing to do with the level of acid- the pH - of the coffee.
• Body:
  Refers to the coffee’s texture - the sensation of the weight of the coffee in the mouth. That can range from thin and watery to medium or full, almost buttery. Coffee’s body comes from undissolved liquids and oils that remain suspended in brewed coffee. The bean and brewing influence the coffee’s body.
• Flavor
  Refers to the coffee’s overall taste sensation - the total impression of a coffee’s taste, aroma, body and acidity. It can be used in a general sense (this coffee has lots of flavor) or in a relative comparison with other flavors (this coffee’s flavor hints of vanilla).
• Aroma
  Refers to the distinctive and complex fragrance of the brewed coffee. It comes from gases that escape from the roasted beans after they are ground, and from vapors released during brewing. It is the first indication of a coffee’s quality.
• Balance
  Refers to how well the various flavor characteristics in a coffee blend with each other. A balanced coffee is one in which no single flavor characteristic predominates or overwhelms the others, but which is still complex enough to be interesting [TOP]

What's In a Name
Specialty coffee can be classified in many different ways: by similarity of characteristics, countries of origin or appearance. The Oasis Coffees are grouped into the following families:

• Dark Roasted
  Arabica beans that have been roasted longer to produce a darker bean and a richer taste.
• Varietals
  Unblended beans grown in a specific country and region. Varietals have a distinctive taste derived from growing conditions in their country of origin.
• Blends
  A combination of two or more varietal beans to create a customized flavor with characteristics that complement one another.
• Flavored
  Beans that have been complemented with a flavor such as chocolate, macadamia nut, or vanilla.
• Decaffeinated
  Beans with the caffeine removed from the green beans using either the European Process or the Natural Water Process. Our decaffeination processes remove up to 97% of the caffeine while retaining all the coffee’s flavor components.
